White Chocolate Cheesecakes
Okay okay okay, next time I promise I will use an original recipe, but today, I'm sticking with Lola.

Baked cheesecakes are a firm favourite of the Morrow household, a family tradition at christmas time (not very christmassy but very decadent and filling, which is what you want during the festive season)

After making a fair few cupcakes, I decided to break with tradition and make these luxury mini treats. These mini white chocolate cheesecakes were topped with a Macadamia praline. I've made a praline once before and it was a complete disaster, as I burnt the sugar. However, this time I used a sugar thermometer and I think it was a success. They had a light texture, with contrasting crunch from the praline and the biscuit base.
