Rainbow Cake

After searching for inspiration online for my cupcake making endeavours I stumbled across a marvellous thing 'The Rainbow Cake'! As soon as I saw what other people had created I needed to make my own version.
To make my rainbow cake I made a large batch of vanilla cupcake batter, separated it evenly into six bowls and added my rainbow colours. As I wanted really bright and vivid colours I had to use a lot of food colouring (however, you could use less and go for pastel shades). Once I had my six rainbow colours I then began baking! I used one cake tin to ensure all the layers were the same size and shape. I then cooked each layer separately, once all the layers were cooked and cooled I assembled them with some American style white frosting, putting a layer of frosting in between each layer. When this was done I coated the entire cake with more white frosting and smoothed it out for presentation!
Once the cake was iced I began to feel nervous as I wondered what awaited me inside the cake and whether the rainbow effect had worked. I took the plunge, grabbed a knife and cut into the cake! After I removed a slice, I saw that all my efforts had paid off and I ended up with a rainbow on my plate! (in the form of a cake) Happy times, who can look at this cake and not smile!
