Rose and Pistachio Cupcakes
For no apparent reason I decided to make some Rose & Pistachio cupcakes this weekend. I didn't think I liked rose, but it turns out, I do!

These cupcakes were so good, taking a bite was heavenly. To give these cupcakes they're Persian flavour I used chopped pistachios in the sponge, rose essence in the buttercream icing and sprinkled pistachios on the top.

  • 180g Plain Flour
  • 1 1/4 tsps Baking Powder
  • 1/4 tsp Salt
  • 150g Butter
  • 150g Caster Sugar
  • 45g Chopped Pistachios
  • 1 tbsp Vegetable Oil

  • 1 tsp Rose Essence
  • Pink Food Colouring
